Trestles Coastal Cuisine is ‘Approved and Certified’ for Indoor Dining
I met Jose Espinoza, owner of Trestles Coastal Cuisine, a few weeks back after the Colorado Governor Jarod Polis announced the counties which were moving into the Code Red Restrictions on the new dial. This category on the dial is one step short of shutdown. The response from Jose and many other restaurant owners in Castle Rock shared the same voice, ‘We will not survive this round of restrictions’.
Since then, Douglas County Commissioners worked with the Governor and the Colorado Department of Public Health and Environment (CDPHE) to create a variance to allow restaurants to open at 25% capacity. The Five Star Program required these restaurants to adhere to a list of standards for public safety during the Code Red Restrictions during the Covid-19 era of which we are currently within. After a bit of laborious paper work and restaurant arrangements, Trestles Coastal Cuisine is now ‘Approved and Certified’ to open for indoor dining at a capacity of 25%, by reservation only. The Five Star Program requires the business establishments to check temperatures, gather customer information for contact tracing, and in many case, adhere to air conditioning circulatory standards.
“At least I can keep my people employed”
Like many restaurant and local small business owners, 25% still will not pay the bills. The variance may be a step in the right direction, but according to most, it is still not enough. This is a Christmas like no other for our local business owners, their employees, and their families.
