611 North Wilcox, formerly the site for Uniscali, has changed hands. New owners and long time restaurateurs, Janine and Michael Glennon, are looking to reopen the location’s doors to the public next week. They will be introducing their latest endeavor to Castle Rock; VistaVino Modern Grill.
VistaVino’s menu will feature food infused by the region of Tuscany, Italy. Known for its simplicity, it is Italian fare prepared with basic seasonings that bring out the wonderful, natural flavors of the meal. Picture a selection of roasted meats, hearty soups and pasta dishes, paired with a Chianti or Tuscan table wine.
